  • Lenin's Pizza - Lenin

When I arrived in this amazing country, I had a big dream: to open my own Mexican restaurant. I had already studied culinary arts, but my first job here was in a pizzeria. Within a week, I was fired—I didn’t know how to make pizza properly. It was discouraging, but that experience shifted my perspective. Instead of giving up, I decided to learn a new skill: how to master the art of pizza.

I applied to another pizzeria, and unfortunately, I was let go again. But this time, I left with a piece of advice: "You’re a great cook, but a terrible pizza maker. Stick to what you’re good at." Still, I wasn’t ready to give up. I moved to Colorado with one goal—to become a great pizzaiolo.

I tried again, this time in an Italian restaurant. But now I had something different: determination. I worked hard, learned as much as I could, and the team gave me a chance. Thanks to their patience and my persistence, I finally earned my place as a pizza maker.

Three years later, I wanted to grow even more. I joined another top-rated pizzeria where I learned advanced techniques and deepened my knowledge. Two years after that, I was hired by someone with an innovative idea—how to take authentic pizza and turn it into a unique business. It was a new challenge for me. I knew how to make great pizza, but I had to learn how to turn it into something bigger.

That’s how Lenin’s Wood Fire Pizza was born—a dream fueled by failure, built on resilience, and baked with passion.

  • Sabor y Salsa - Javier & Xavier

Hi! I’m one of the co-founders of Sabor y Salsa, a modern-meets-traditional Mexican food stall based in Louisville, CO, that is proudly family-run. Before launching this dream, I spent 7 years managing teams at Chipotle Mexican Grill—where I fell in love with the fast-paced, people-first side of the food world. I also spent 5 years in personal banking, helping people manage their money and build toward their goals. For as long as I can remember, my parents, Luz and Javier, have dreamed of opening their own Mexican restaurant. My dad has always been a hard worker, balancing two jobs (sometimes even three) to support our family. From roofing under the blazing sun to working in a variety of kitchens, he's done whatever it took to provide for us and hone his culinary skills. My mom has worked just as hard, raising me and my three sisters, contributing to our family's well-being, and financial support while all being Louisville Natives. Now, with Sabor y Salsa, we’re combining our roots, experience, and passion to serve honest, flavorful food that reflects our roots and brings people together.

Whether you're an occasional or regular customer, we’re always grateful to serve you.

  • Magic Food Bus - Gary & Ashley

We’re Gary and Ashley—two chefs with a shared love of great food, big flavors, and creating joyful experiences. Our journey started in 2018 when we bought an old school bus from a Lafayette private school and spent 18 months turning it into a full-blown mobile kitchen. Fast-forward to June 2020, right in the heart of the pandemic, we hit the road and officially launched The Magic Food Bus. It began in neighborhood lots and local breweries, but thanks to word of mouth and a whole lot of hustle, we quickly grew into something bigger. By September 2021, we left our “safe” jobs behind to run the bus full-time—and we haven’t looked back since. Our food is playful, global, and chef-driven—designed to make you smile and maybe say, “Damn, that’s the best thing I’ve tasted all week.” But just as important to us as the food? The people. We believe in genuine hospitality, warm vibes, and creating the kind of experience that keeps folks coming back. A little about us: Gary grew up in Michigan with hardworking parents who taught him discipline, grit, and the importance of doing things right. He trained at Johnson & Wales and honed his craft under a Culinary Olympian. Ashley, a Colorado native, was raised by a fiercely determined single mom who ran her own small business. She passed down her entrepreneurial spirit and love of food, which still fuels Ashley’s creativity in the kitchen today. With over 45 years of combined restaurant experience, we’re proud to say The Magic Food Bus is a true reflection of everything we love—hospitality, hustle, community, and amazing Food. And now? We’re incredibly excited to bring that same energy to Relish Food Hall//Pickleball, where we're launching our next chapter! Our menu will feature fresh smashburgers, crispy chicken, gyros, and rotating Italian and Mediterranean-inspired specials—made with local ingredients and lots of love. We’re also proud to offer thoughtful vegan options and a dedicated gluten-free zone, so everyone can enjoy something delicious and feel right at home. While the wheels might not be turning, everything you’ve come to love about the bus—our flavor-packed dishes, commitment to quality, and genuine customer care—will still be front and center. We can’t wait to welcome you to our new home and keep spreading the magic, one bite at a time.

  • ArepasCO - Loirissell & Betzy

ArepasCO is a story of friendship, flavor, and roots.

Loirissell Agüero and Betzy Rincón are the founders of this dream, born during the height of the pandemic and transformed into a symbol of resilience, flavor, and Venezuelan pride. Friends since their early days in Venezuela, they each emigrated to Colorado with their families and after years of working in various jobs as immigrants, decided to join forces and build something of their own.

Driven by love for their culture and a deep passion for homemade cooking, they launched a food truck that has become much more than just a place to eat—it’s a space where identity, tradition, and community are served in every dish. Now, ArepasCO is also expanding into Relish, a new home that allows them to continue growing and sharing their sazón straight from the heart.

  • Shari Bowls - Ahtziri

Hi everyone! I’m so excited to be starting this new adventure with Shari Bowls. Growing up, I was exposed to many types of Asian food thanks to my parents' hard work in the restaurant industry. Japanese food has always been one of my favorites. So when the opportunity came to open my own place, I knew I had to take it. My parents have always wanted the best for me and have supported me every step of the way. Thanks to them, I’m now able to share something I truly love with all of you.
